long can one keep candied fruit and fruit preserves?
Candied fruit and fruit preserves can be kept a minimum of three
months. When the fruit is in syrup, it can be kept for six months.

should one keep your preserves, candied fruit, and fruit in syrup?
All
my products should be kept in a cool dry place, such as a pantry,
a garage, or a basement.

is a "confit"?
It's preserves made from candied fruit which has been split up in
the cooking.

How does one eat the creamy
walnut, hazelnut, and almond spreads?
Like preserves: on bread, in a yogurt, in baked goods, by the spoonful,
on pancakes, and so on.

How is it best eat the fruit in syrup?
Let them drain 15 minutes before eating. The syrup can be used to
flavor cakes, yogurt, fruit salad, and so on. How do you create
a candied fruit? I use fresh fruits which I prepare by blanching,
before cooking them over the flame 7 to 10 times, alternating with
rest time. How long does it take to candy a fruit. It takes me at
least three months.
Can one candy all fruit?
YES! However, certain fruits are better adapted to candying than
others. As for me, I candy about 20 different fruits.
Do you use particular varieties of fruit?
Yes,
of course. I use essentially the old varieties which have been traditonally
reserved for candying - which leads me into a great deal of research.
How does one best eat a candied fruit? The whole fruits and the
fruits in syrup are usually eaten as dessert, accompanied by tea,
coffee, or a disgestive. The pieces of candied fruits are much used
in baking. To best appreciate them, start with the lightest flavors
(pineapple, cherry, pear) and go on to the stronger flavors (citrus
fruit and angelica).
What are the "brisures" of candied fruit?
The "brisures" are fruits cut up into medium size pieces. They have
benefited from all the stages of the candying process (3 months).

Angelica
Archangelica is a very fragrant umbellifer which grows by the water
and can reach a height of three meters. I candy the leakstalks,
